Biryani History Explained

Biryani, jo aajkal ke khanepan ka ek mahatva purna hissa ban gaya hai, uska itihas kaafi rich aur fascinating hai. Yeh dish na keval Bharat ke andar balki videshon mein bhi prachur roop se priy hai. Biryani ka itihas dekhte hain aur uske vikas mein hone wale parivartan ko samajhte hain, jo ek lazeez aur sanskritik dish ko banane mein aaya.

Biryani ka Prachin Itihas:

Biryani ka itihas behad prachin hai aur iska prachar Mughal samrajya ke dauran hua. Manyata hai ki biryani ka naam Persian shabd 'Birian' se aaya hai, jo bhojan ko banane ke tareeke ko darshata hai. Ismein sabhi samagriyan ek saath pakai jati hain, jisse ek aisa bhojan banta hai jo alag-alag swadon ka mishran ho.

Purani dastaanon mein milta hai ki biryani ka prachin roop Arab desh se Bharat laaya gaya tha, lekin yeh dish Mughal samraton ke dauran apna asli roop dikhane lagi. Akbar ke samay mein Mughal khansamahon ne biryani ko apne kala ka ek abhinn hissa banaya.

Mughal Samraton ka Yogdan:

Mughal samraton ne biryani ko apne darbaron mein, khaas kar ke Shah Jahan aur Aurangzeb ke dauran, kai alag-alag roopon mein istemal kiya. Is dish mein gosht, chawal, dahi, aur mewaon ka mishran hota tha, jo use ek alag aur lazeez swaad deta tha. Biryani ke vikas mein samay ke saath-saath, bhumi ke anukool parivartan bhi ek mahatva purna karan tha. Alag-alag kshetron mein bani biryani mein sthaniya padarth aur svad ka apna alag mahatva tha. 

Biryani ke Vibhinn Prakar:

Bharat ke vibhinn kshetron mein banne wali biryani mein ek aalag hi prakar ka swaad hota hai. Lucknow ki Awadhi Biryani mein milne wale mewa, fragrant chawal aur mitha itra iske visheshtaayen hai. Hyderabad ki biryani, jo ek mashhoor South Indian biryani hai, usmein zyada mirch, dhaniya, aur tel ka istemal hota hai.

Mumbai ki biryani, jo kuch alag swadon aur padartho ka mishran hai, usmein kala masala ka istemal hota hai. Kerala aur Kolkata mein bhi apne-apne swad ke anusaar biryani taiyaar ki jaati hai. Har kshetra apne sthaniya padarth aur tarkib se biryani mein apna speshal dhawaja bhar deta hai.

Biryani ka Lokpriy Hona:

Biryani ka lokpriy hona uski swaadistta, alag-alag padartho ka khoobsoorat mel, aur asaan taiyaari ke karan hai. Ismein dher saari mirch, teekha masala, dahi, aur gosht ka mishran hota hai, jisse yeh khana ek swabhavik rup se lazeez aur bhara hua hota hai.

Biryani ko banane mein samay aur mehnat toh lagti hai, lekin iske swaad ko chakhne ke baad yeh saara kuchh bhool jata hai. Is dish mein gosht ka bhara hua tukda, chawal, aur masale ka mishran hota hai, jo use ek poori bhojna banata hai.

Biryani ka Videshi Rang:

Videshon mein bhi biryani ka prachar badha hai aur log ise apne alag-alag swad ke anusaar taiyaar karte hain. Middle East mein isko 'Mandi' ke naam se jana jata hai, jismein gosht, chawal, aur masale ek saath pakaye jaate hain. Asia ke kuch deshon mein bhi biryani ki apni ek mahatva purna jagah hai.

Biryani ne apne swaad aur visheshtaon se kuch Bollywood filmein bhi prabhavit ki hain. Kuch filmein aisi hain jo biryani ke chakkar mein ghumi hui hoti hain aur unka chakkar chalata hai. Biryani ka ek khansama ya dhaba bhi filmein bahut baar dikhaye gaye hain, jo ki logon ke dilon mein ek alag jagah banata hai.

Biryani ki Aaj ki Stithi:

Aaj ke samay mein, biryani ek aise vyanjan ban chuki hai jo har kisi ke dil ko chu jaata hai. Restaurants mein toh alag-alag prakar ki biryaniyaan milti hain, kuch mein veg, kuch mein non-veg, kuch mein mutton, aur kuch mein chicken biryani hoti hai.


Ghar par bhi log ise badi asani se banate hain, aur har kshetra mein apne-apne tareekon se ismein apna tadka lagate hain. Aajkal toh biryani ki recipe internet par bhi asaani se mil jaati hai, jisse log ghar par bhi isey try kar sakte hain.

Biryani, jo ek sadharan bhojan nahi, balki ek sanskritik vyanjan hai, uska itihas dekha jaaye toh yeh humein dikhata hai ki kaise kuch sadharan padarthon se bhi ek vishesh bhojan taiyaar kiya ja sakta hai.
